Our process:

Lakeward Spirits' line of liquors are built on a foundation of outstanding local grains. Until recently, the bulk of North American malting operations were in the Mid-west and Canada. We're extremely fortunate to have four new maltsters in the WNY area: Pioneer Malting, NYCraftmalt, Queen City Malting, and Niagara Malt work with local farmers to bring us the best barley and other grains in our region. Our process gives customers a deep understanding and taste of their local agricultural systems. We love the flavor of NYS grains, and so will you!
This focus on quality grains goes hand-in-hand with our commitment to using natural resources responsibly. Clean water has given WNY rich opportunities throughout its history, and continues to shape our region to this day. Our grain-to-glass process was designed with responsible water use in mind. Our solid copper stills are cooled by a 5,000 gallon reservoir buried in The Barrel Factory's floor- this functions as a heat sink, allowing us to reuse the water almost indefinitely. All other "waste heat" is collected for use in cleaning, mashing, or even warming our event center. Spent mash from our vodka, whiskeys, and gin is given to local farms for composting or feed, bringing our product full-circle back to the field.
For us, good spirits mean nothing without friends to share them with. Our location in The Barrel Factory puts us right in the middle of a waterfront community of deep history and ongoing revitalization. With new coffee shops, bakeries, breweries, and restaurants emerging, we can't imagine any place better to share a drink and good conversation. Our neighborhood inspires us a little more each day, and we can't wait to see what's next for the Ward!
